They’re a popular snack and appetizer in Indian, Goan, and East African cuisines. In our home, these were often served during special occasions and family gatherings. Often, it is a comforting treat with a cup of chai.

The origins of potato chops can be traced back to Portuguese-influenced Goan cuisine. They became a beloved dish among the local Christian communities. Over time, they spread to Indian Parsi households and even made their way to East Africa through Indian migrants. Each region adds its own unique twist—some use beef or lamb, while others prefer chicken or even a vegetarian filling with spiced lentils or paneer.

For the Mince Filling:

For the Potato Casing:
  • 3 large potatoes, boiled and mashed
  • 1/2 tsp salt
  • 1/2 tsp black pepper
For Coating & Frying:
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • Oil for shallow/deep frying

Instructions:

1. Prepare the Mince Filling

2. Prepare the Potato for the casing:

  1. Boil, peel and mash the potatoes when they are still warm so that the mashed potatoes are smooth. Add salt and black pepper. Mix well.

3. Assemble the Chops

  1. Take a handful of the mashed potato and create a ball. Then flatten it in your palm.
  2. Create a depression in the center.
  3. Place a spoonful of mince filling in the center.
  4. Carefully cover with the mashed potato, making sure the mince is not oozing out.
  5. Flatten it and shape into a round cutlet (chop).
  6. Make the rest of the chops using the same approach.

4. Coat and Fry

  1. Dip each chop in the beaten egg, then coat evenly with breadcrumbs. Shake off excess.
  2. Heat oil in a pan and deep/shallow fry until golden brown on both sides.
  3. Drain on paper towels and serve hot with chutney or ketchup.
