A simple, healthy dish made with cluster beans or gawar phali as it’s commonly known in India.
Cluster Beans are a legume, also known as gavar, gawar, or guvar beans, often available in fresh and frozen forms at an Indian grocery store. Ingredients
- 300 grams gawar phali / cluster beans
- 1 small onion, diced fine
- 1 tablespoon oil
- 1 teaspoon carrom seeds (ajwain)
- 2 tomatoes, finely diced
- 3 pods garlic, minced
- 1 teaspoon ginger, finely minced
- 1/2 teaspoon haldi (turmeric) powder
- 1/2 teaspoon red chili powder
- 1 teaspoon dhania powder (coriander)
- 2 tablespoon coriander leaves chopped (hari dhania)
Method:
- In a pan, heat the oil. Add the carrom seeds and let it splutter, and then add the onion, ginger and garlic. Cook till the onions are translucent.
- Add the tomatoes, chili powder, coriander powder, and turmeric powder. Saute on medium flame, until the tomatoes are mushy.
- Add salt to taste, one-third cup water, cover and cook on medium flame for about 12 minutes. Remove the lid and sprinkle the coriander leaves.
- Serve hot with chapatis
