Made with silken tofu, it’s not only silky-smooth but also naturally low in fat and high in protein—so you can indulge guilt-free. Unlike traditional mousse, which relies on heavy cream and eggs, this version keeps things simple with wholesome ingredients while still delivering that decadent chocolatey flavor. Whether you’re a tofu skeptic or a longtime fan, this easy recipe will surprise you with how delicious (and nutritious!) dessert can be.
Servings: 4 -6 Time: 10 minutes plus resting time of 1 hour
Ingredients:
- 16 oz silken tofu (while you are gathering the rest of the ingredients, get the tofu out of the fridge and let it rest on counter-top)
- 4 oz chocolate chips (can use vegan chips or dark chocolate chips) – melted
- 2 tbsp maple syrup
- 2 tbsp cocoa powder
- 1 tsp vanilla extract
- Pinch of salt
- 1 tsp instant coffee powder (optional but you’ll love it)
Method:
Step 1: Prep Your Tofu
If you’re using refrigerated silken tofu, let it come to room temperature before starting. This helps everything blend smoothly.
Step 2: Melt the Chocolate
Melt your (vegan or regular) chocolate using one of two methods:
- Microwave: Heat in 30-second intervals, stirring in between, until fully melted.
- Double Boiler: Place the chocolate in a heat-proof bowl over a pot of simmering water, stirring until smooth.
Step 3: Blend Everything Together
In a food processor, combine the drained silken tofu, maple syrup, cocoa powder, vanilla, salt, and optional coffee powder. Blend until smooth. Then, pour in the melted chocolate and blend again until fully incorporated and creamy.
Step 4: Chill and Set
Spoon the mousse into serving glasses or ramekins, then refrigerate for at least an hour to let it firm up.
Step 5: Serve and Enjoy
Top with (vegan) whipped cream, shaved chocolate, or fresh berries, and dig in! No one will guess this was made of tofu!
