- 3 medium-sized potatoes, boiled and mashed

- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- 10-12 curry leaves

- 2 tablespoons oil
- Fresh coriander leaves, chopped (for garnish)
Instructions:
- Heat oil in a pan or skillet over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds and let them sizzle for a few seconds.
- Add asafoetida and curry leaves, sauté for a few seconds.
- Add chopped onions, green chilies, and grated ginger. Sauté until onions turn translucent.
- Add minced garlic if using, and sauté for another minute.
- Add turmeric powder, red chili powder, and salt. Mix well.
- Add the mashed potatoes to the pan and mix everything together until the spices are evenly distributed. Add 4-5 tablespoons of water and mix well.
- Cook the mixture for 4-5 minutes, stirring occasionally, until the flavors meld together.
- Garnish with freshly chopped coriander leaves.
