Ingredients:
- 2 everything bagels sliced in half
- 1 large, ripe avocado
- 1 tomato
- 1/4 cup baby spinach
- 4 tablespoons cream cheese
- 1/4 teaspoon garlic powder
- 1/4 small red onion diced fine
- 1 scallion diced fine
- Salt and pepper to taste
- 3 eggs
Method:
- Mix half of the garlic powder and scallion into softened cream cheese.
- Mash avocado and mix in tomatoes, red onion, and remaining garlic powder.
- Beat the three eggs, add salt and pepper to taste.
- Fry half of the beaten eggs like an omelette in a pan with a dash of oil, then repeat with the remaining eggs.
- Toast the bagels.
- Smear one half of each bagel with cream cheese and the other half with avocado mash.
- Layer one omelette and half of the baby spinach.
- Repeat for the second bagel.
