Ingredients

  • 3 cups Corn (fresh, frozen or canned)
  • 1/4 cup Cilantro, chopped
  • 1/2 cup red onion, diced
  • 1 jalapeno, de-seeded and diced
  • 2 teaspoons lemon juice
  • 1 tablespoon lime juice
  • 1/4 cup diced red bell pepper (optional for extra sweetness and color)

Directions:

  1. Chop the red onion, cilantro, jalapeno and poblano pepper.
  2. If using fresh or frozen corn, boil 2 cups water. When boiling, add the corn to it, boil for 6 minutes. Drain and use corn.
  3. Combine chopped and remaining ingredients in a medium mixing bowl.
  4. Refrigerate until serving to allow flavors to marinate.
